Muskego — Georga Wilson of Muskego took first place in this years' Great American Spam Championship at the Wisconsin State Fair.
She won the blue ribbon and a $150 cash prize for her bacon jack turkey sandwich, a recipe she created with the help of her daughter and husband the evening before the competition. This was Wilson's first time winning the Spam contest at the fair, although she has entered every year since 2001.
"All of a sudden, boom, I won," said the happy winner.
There was just something about how all the flavors of the various ingredients worked together in this creation, she said. "They set everything else off."
Wilson acknowledged that she was out of ideas when she asked her family for help. Her husband piped up with pepper jack cheese and her daughter, 27, chimed in with bacon.
"I said pickles," Wilson said.
So, off to the kitchen she went as she has many times before to create her own recipe.
"I've been cooking since I was 12 years old," Wilson said.
And she likes to cook with Spam, a canned precooked meat product.
Another of her creations is a Spam broccoli and Swiss ring around. She mixes Spam with the other ingredients and places them onto crescent rolls. She folds the dough over to form a ring. The family really likes that.
Wilson's bacon jack turkey sandwich recipe came out on top of 26 entries from adults and children. Her recipe is now submitted for national judging and she has the chance to win a trip for two to the 2014 Spam Jam Waikiki in Hawaii.

Bacon Jack Turkey Sandwich
8 bacon slices
1 (12-ounce) can Spam turkey, sliced
4 rolls, split
8 lettuce leaves
8 slices pepper jack cheese
8 thin slices onion
8 tomato slices
4 dill pickle slices
Place bacon in a large skillet over medium-high heat. Cook until browned on both sides. Remove from the pan and drain on paper towels.
Place slices of Spam turkey in large skillet over medium heat and cook until lightly brown on both sides.
Slice rolls in half. Spread with mayonnaise on top half of each roll. Starting from bottom half of roll place 2 leaves of lettuce, 2 slices of Spam turkey, 2 slices of pepper jack cheese, 2 slices of bacon, 2 slices of onion, 2 slices of tomato and 1 pickle slice. Top with roll spread with mayonnaise.
Yields: 4 servings
