Muskego youth makes Eagle Scout

Muskego - Arek Kashian of of Boy Scout Troop 183 became an Eagle Court in ceremonies Sunday at Brookfield Academy.

His Eagle Scout project was renovating a trail in Brookfield's Endicott Park.

Arek is the son of Russ and Susan Kashian, Muskego.

Spam virtuoso wins State Fair blue ribbon

Muskego - Tammy O'Connell of Muskego has won the Great American Spam Championship at the Wisconsin State Fair for her Spamakopita, a recipe based on the famous Greek dish spanakopita.

She not only won the blue ribbon but a $150 cash prize.

The recipe calls for a half Vidalia onion (or sweet yellow onion) finely chopped; one 12-ounce can of turkey Spam, finely cubed; olive oil (for sautéing); two teaspoons of dill; eight cups (or one 10-ounce bag) of fresh spinach, finely chopped; two tablespoons of water; eight ounces of crumbled mild feta or goat cheese; one-third cup of shredded Romano cheese; one teaspoon of Greek seasoning; a quarter teaspoon salt (or to taste); two eggs; one package (or two sheets) of puff pastry dough, thawed.

The recipe directions are to:

Preheat oven to 350 degrees; sauté onion and Spam in olive oil with dill until onion is clear and Spam is lightly browned; microwave chopped spinach with two tablespoons of water for 7 minutes; rotate and stir halfway through, drain; combine onion and Spam mixture with cooked spinach; add feta cheese (or goat cheese), Romano cheese, Greek seasoning and salt; and then set aside to cool.

Using a fork, beat one egg and pour into cooled Spam and spinach mixture; roll out each sheet of puff pastry dough to 14-by-14 inches; cut each sheet into thirds and then each third into four 3½-inch squares to come up with 12 squares per puffy pastry sheet; beat remaining egg with fork; fill each square with Spam mixture; brush egg on edges and fold into triangle using a fork to seal edges; brush egg on top of each Spamakopita; arrange on greased sheet pan; bake 18 to 22 minutes or until golden brown.

The recipe yields two dozen pieces.

Zaffiro's Pizzeria opens at Ridge Cinema

New Berlin - Zaffiro's Pizzeria & Bar opened Aug. 3 at the Ridge Cinema, 5200 S. Moorland Road.

The 165-seat restaurant will include a full-service bar offering signature cocktails, happy-hour specials and a beer and wine list. The restaurant will also include delivery service and carryout service for local residents. Similar to its other two locations, the New Berlin Zaffiro's will provide iPads for guests to use as they dine and live acoustic music on Thursday and Friday evenings.

Zaffiro's specializes in thin-crust handmade-to-order pizzas and will offer small plate appetizers, fresh salads, a variety of pastas, torpedoes and sandwiches and desserts, including gelato made daily at the restaurant.

In addition to the Zaffiro's restaurant, a Zaffiro's Express service has been added to the concession area inside the theater. Guests can order 8-inch or 16-inch pizzas, along with other Zaffiro's menu items, at the counter to take with them into a movie.
